Pressure Cooker Pork Belly


  • 1 tablespoon oil
  • 5 slices ginger
  • 2 shallots (cut into 3-inch pieces)
  • 3 star anise
  • 1 cup white wine
  • 1 cup light soy sauce
  • ¾ cup dark soy sauce
  • ½ cup sugar
  • 1 teaspoon salt
  • 5 cups water
  • 2½ lbs pork belly


    1. Add oil and ginger to a Sakuchi deep frying pan. Let it caramelize for about 30 seconds. Then add the shallots and cook for another 30 seconds.
    2. Continue to add star anise, rice wine, soy sauce, dark soy sauce, sugar, salt, and water. Cover and cook for 5 minutes.
    3. Put the liquid in the deep frying pan and the pork belly into the Sakuchi Pressure Cooker and cook on medium heat for 30 minutes.
    4. Turn off the fire and let the pressure release naturally. Once safely opened, remove the pork belly and cut it into small pieces as needed.
